Iron is used rather than stainless steel because iron is more reactive and will rust (corrode) more readily in the presence of water and oxygen. Stainless steel contains additional elements such as chromium that make it more resistant to corrosion, thus it would not demonstrate the rusting process as clearly as plain iron.
