Fats and oils provide the body with energy, and they are a more concentrated source of energy compared to carbohydrates.
For example, vegetable oil contains 3700 kJ per 100g, while bread flour (mostly carbohydrates) contains 1420 kJ per 100g.
Transport and Storage of Vitamins
Fats and oils are essential for the transport and storage of fat-soluble vitamins in the body.
Vitamins are divided into two groups: water-soluble (B-complex and C) and fat-soluble (A, D, E, and K).
Unlike water-soluble vitamins that need regular replacement in the body, fat-soluble vitamins are stored in the liver and fatty tissues and are eliminated more slowly.
Role of Fat-Soluble Vitamins
Vitamin A: Essential for eye function and keeping the nose and throat moist. Deficiency can lead to night blindness and throat infections.
Vitamin D: Important for the formation of strong bones and helps in the uptake of calcium. Deficiency can result in weak bones (Rickets).
Vitamin E: Acts as an antioxidant and protects other vitamins like A and C. Deficiency is rare.
Vitamin K: Necessary for blood clotting. Its deficiency can lead to excessive bleeding.
