Hot smoking involves exposing the fish to smoke rising from smoldering wood chips, but at a higher temperature. The temperature is gradually increased to 80°C, which effectively cooks the fish. Unlike cold smoking, hot smoking results in a fully cooked product that does not require further cooking before consumption.
