Methods of Heat Transfer
- Conduction
- Heat travels from one molecule to another through a solid object.
- Example: Frying food on a pan – heat moves from the ring to the pan, then cooks the food.
- Convection
- When liquids and gases are heated, they rise and cooler liquids or gases replace them, creating convection currents.
- Example: Baking in an oven – hot air circulates around the food.
- Radiation
- Heat is transferred directly from a source to the surface of the food.
- Example: Grilling – heat rays from the grill cook the food without needing contact.
- Many cooking methods combine heat transfer techniques. For example, boiling pasta involves conduction (heating the saucepan) and convection (water heating and cooking the pasta).
