Effects of Cooking on Cheese
- Protein Coagulates: When heated, cheese's protein sets, which can cause it to shrink.
- Fat Melts: Cooking cheese causes the fat to melt; overcooking can make cheese greasy.
- Colour Changes: Cheese can brown as it cooks, adding flavour.
- Texture Changes with Overcooking: Cheese can become rubbery and hard to digest if overcooked, which is especially important for the diets of children and older people. Always add cheese towards the end of cooking when possible.
